FRESH SALSA

INGREDIENTS:
3 cups chopped tomatoes
1/2 cup chopped green bell pepper
1 cup onion, diced
1/4 cup minced fresh cilantro
2 tablespoons fresh lime juice
4 teaspoons chopped fresh jalapeno
pepper (including seeds)
1/2 teaspoon ground cumin
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper


DIRECTIONS:

  • Mix ingredients and serve.

SAUTEÉD SQUASH WITH LEEKS AND BASIL

INGREDIENTS
2 TBS butter
1 Tblsp extra virgin olive oil
4 cups cubed summer squash
2 cups sliced leeks (well washed)
sea salt and freshly ground pepper
4 oz feta cheese, crumbled
2 TBS chopped fresh basil


INSTRUCTIONS

  • Melt the butter and olive oil in a large skillet over medium high heat for 20-30 seconds.
  • Add the squash and leeks to the pan and saute 5-10 minutes until tender and slightly caramelized.
  • Season with salt and pepper.
  • Transfer the vegetables to a serving platter and sprinkle with the fresh basil and crumble feta. Serve warm.
